15 Jul Pasta with creamy avocado sauce, herbs and vegan parmesan cheese
This pasta is definitely one of my favorite and fastest dishes in lazy hot days. Simple ingredients, fast execution and an explosion of taste! Its advantage is that you will prepare the sauce in a blender, just mixing all the ingredients and cooking the pasta is not even 10 minutes. On hot summer days, such recipes are a hit. Pasta is very creamy, aromatic and slightly cheesy thanks to the addition of yeast flakes, which are the key to success here. Smoked paprika is also a component which I would advise not to ignore, in my opinion it adds an unusual character. Along with chili, garlic, coriander, lemon and onion is a real bomb! You will be surprised that with such simple ingredients that probably you have in your home you can prepare something so healthy and so fantastic!
Quick and easy
Unlike most known fruits rich in simple sugars, avocados contain healthy fats which not only help to burn fat, but also have many health benefits. They lower cholesterol, regulate blood pressure and contribute to maintaining a slim figure. But those are not the only advantages of avocado. The avocado is also rich in potassium (more than bananas), which regulates blood pressure, supervises the proper operation of the heart, and also has a beneficial effect on the nervous system. This fruit contains a lot of vitamins C, E and A – powerful antioxidants, which have anti-cancer effect, as well as B vitamins, including folic acid which is particularly valuable. Eating avocado also positively affects the eyes because of lutein and zeaxanthin. So let’s eat avocados!
- 400g spaghetti (I love corn pasta)
- 1 large avocado
- juice from ½ lemon
- 2 Garlic cloves
- bunch of cilantro (leaves only, no stems)
- ⅓ teaspoon salt
- ⅓ teaspoon pepper
- ⅓ teaspoon chilli
- ½ teaspoon smoked paprika
- 2 tablespoons yeast flakes
- green onion (green part only)
- vegan Parmesan from this recipe (click)
- cherry tomatoes
- green parts of young onions
- All the ingredients for the sauce place in a blender and blend for smooth mousse.
- Stir hot pasta with sauce and sprinkle with vegan parmesan cheese. Serve with cherry tomatoes.
